Red Pepper Egg Bites
(Serves 6 - 2 egg bites per serving)
Ingredients
8 large eggs
1 cup cottage cheese
1 cup feta cheese
½ tsp salt
¼ tsp black pepper
1 cup chopped red bell peppers
1 cup chopped green onions
½ cup shredded Mexican cheese

How to:
1.Preheat oven to 325°F (160°C) and coat a 12-cup muffin pan.
2. Blend the eggs, cottage cheese, feta, salt, and pepper on high for 10 seconds.
3.Pour the egg mixture into the muffin cups. Add peppers and onions, then sprinkle with shredded cheese.
4.Bake for 25–30 minutes, until the egg bites are set and lightly browned.
5.Let the pan sit for 5 minutes before removing egg bites to cool on a wire rack.
Notes: I would suggest eating one serving of the baked oatmeal with a serving of the red pepper egg bites to have a balanced breakfast. Both recipes can be made ahead and store beautifully in the fridge (or freezer!)
