Baked Oatmeal

(Serves 6) 

Ingredients

2 cups rolled oats

1 tsp cinnamon

1 tsp baking powder

¼ tsp salt

2 overripe bananas, mashed

1½ cups milk (dairy or unsweetened almond milk)

¼ cup peanut butter

2 tbsp maple syrup

1 large egg

1 tsp vanilla extract

How to:

  1. Preheat oven to 375°F (190°C).

  2. In an 8x11-inch baking dish, combine oats, cinnamon, baking powder, and salt.

  3. In a mixing bowl, mash bananas and whisk in milk, peanut butter, maple syrup, egg, and vanilla.

  4. Pour wet mixture over dry ingredients and stir to combine.

  5. Bake uncovered until the top is golden and the mixture is set, about 30–35 minutes.

  6. Let cool slightly before serving.

    Notes: I would suggest eating one serving of the oatmeal with a serving of the red pepper egg bites to have a balanced breakfast. Both recipes can be made ahead and store beautifully in the fridge (or freezer!)
