Maple Roasted Vegetables
(Serves 4)
Ingredients
1 delicata squash
1 large sweet potato
2 tablespoons olive oil
2 tablespoons maple syrup
1 teaspoon salt
1 teaspoon fresh thyme
How to:
Preheat oven (or air fryer) to 400°F.
Slice and chop delicata squash (scrape out the seeds with a spoon) and chop sweet potato.
In a bowl, toss the vegetables with the rest of the ingredients and mix well.
Arrange vegetables on a large baking sheet or in the air fryer basket.
Roast for 15 minutes, (air fryer) or 20 minutes (oven), flipping halfway through, until soft and starting to brown.
Note: You can substitute delicata squash and sweet potato with other types of squash or any root vegetables you prefer.
Serve with shredded chicken for a balanced high-protein meal.
