Maple Roasted Vegetables

(Serves 4) 

Ingredients

  • 1 delicata squash

  • 1 large sweet potato

  • 2 tablespoons olive oil

  • 2 tablespoons maple syrup

  • 1 teaspoon salt

  • 1 teaspoon fresh thyme

How to:

  1. Preheat oven (or air fryer) to 400°F.

  2. Slice and chop delicata squash (scrape out the seeds with a spoon) and chop sweet potato.

  3. In a bowl, toss the vegetables with the rest of the ingredients and mix well.

  4. Arrange vegetables on a large baking sheet or in the air fryer basket.

  5. Roast for 15 minutes, (air fryer) or 20 minutes (oven), flipping halfway through, until soft and starting to brown.

    Note: You can substitute delicata squash and sweet potato with other types of squash or any root vegetables you prefer.

    Serve with shredded chicken for a balanced high-protein meal.
