This salad is so refreshing!

Healthy Greek(ish) Salad

(1 Serving)

Ingredients

  • 2 cups mixed greens

  • ¾ cup cooked quinoa

  • ½ cup cucumber, diced

  • ⅓ cup pico de gallo

  • ¼ cup kalamata olives

  • 1 tsp olive oil

  • 1 tsp lemon juice

  • 1 tsp Italian seasoning

  • ¼ cup feta cheese

  • 4 oz grilled chicken breast

  • Salt and pepper, to taste

Instructions

  1. Add the greens to a bowl.

  2. Top with quinoa, cucumber, pico de gallo, olives, feta, and chicken.

  3. Drizzle with olive oil and lemon juice.

  4. Sprinkle with Italian seasoning, salt, and pepper.

  5. Toss gently and enjoy!
