Maple Chicken & Carrots

Serves 4

Ingredients

  • 1 tablespoon fresh rosemary, finely chopped

  • 1 lb chicken breasts

  • 1 lb carrots, halved lengthwise

  • 2 tablespoons olive oil

  • 2 tablespoons maple syrup

  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 450°F.

  2. Arrange the chicken on one sheet pan and the carrots on another.

  3. In a small bowl, whisk together the olive oil and maple syrup.

  4. Brush the carrots with the mixture, then brush the chicken.

  5. Season both the chicken and carrots with salt, pepper, and the chopped rosemary.

  6. Place the chicken on the upper rack and the carrots on the lower rack.

  7. Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F and the carrots are tender.
